The recipe for porchetta alla trevigiana

Da Pian’s porchetta is prepared following the traditional procedure, to rediscover the wholesome flavours of the Treviso area. Porchetta trevigiana is a speciality that originates in the early twentieth century in a brewery in Treviso. It is made from the pork thigh (prosciutto) of a pig about a year old and is processed in one of two ways:

After boning, the leg is seasoned with a mixture of aromatic herbs, a pinch of salt and spices, and no additives and preservatives. The leg is trussed by hand into a traditional shape or put in netting to give it a more compact shape that is also suitable for slicing in a slicer. The next step is cooking and roasting it in an oven at a low-temperature, for a very long time – 14 to 18 hours – in order to preserve the meat’s nutritional properties.

The leg with its bone is simply seasoned with just a pinch of salt, without adding any other ingredients and, after trussing, is cooked in an oven for a very long time, at a low-temperature.

Wholesome, all-natural flavour

Treviso’s Porchetta is very fragrant, tasty and savoury. It is not a very fatty food because, during the slow cooking, the fats dissolve and therefore are partially removed. The porchetta should be served after slicing it with a knife, on warm bread, with the perhaps adding a pinch of salt.

Porchetta Trevigiana trussed in twine

A European pork thigh, boned, mildly seasoned with a mixture of aromatic herbs, a pinch of salt and spices, and no additives and preservatives. It is trussed by hand with twine to give it a more compact shape. Baking it at a low-temperature for a very long time preserves the meat’s nutritional properties, its delicate aroma and flavour typical of roasting and the light brown colour of natural pork.
